Easy Peanut Butter Cookies

I said to Brian, “I want to make something for dessert…” That’s how it started. He said, “make some peanut butter cookies.” And well, here it is. I found inspiration in a recipe I saw online, and of course, changed things up a bit…

Per cookie, it’s good post workout fuel. Providing some simple carbohydrates, complex carbohydrates and of course, some protein (sure, not body builder protein levels…but some…remember, too much of anything isn’t good!). Oh, and there’s healthy fats from the peanut butter, too!

Easy Peanut Butter Cookies

1 cup Peanut Butter (natural, chunky, unsalted)
1/2 cup Sugar
1/2 cup Turbinado Sugar
1/4 tsp salt
1 large egg

* Preheat oven to 350 Fahrenheit Degrees
* Mix together peanut butter, sugars & salt
* Mix in egg until well blended
* On a parchment lined sheet tray sprayed with cooking spray, roll 20 cookie balls. Place 1″ apart (5 X 4), and using a fork make a cross-hatch pattern. Bake for 10 – 12 minutes.
* Allow to cool on a wrack

Serving Size: makes 20 cookies
